Picture it, you are lying in bed and you have had a decent night’s sleep and you roll over to a heavenly smell of something on the stove. You recognize the smell but still aren’t sure of what exactly it might be. Quickly you throw on some clothes and rush to the kitchen just in time to see a big plate of bacon. Your heart jumps because this is an all American favorite and a great way to start your day.
The pork industry is one of the most successful industries in the United States today. Over the past fifty years the production of pork has increased dramatically. The numbers of pigs have grown and the profit made on these pigs has grown. Pigs and their farm role changed dramatically during the past fifty years. During the first half of the 20th century, the pigs found on most farms was primarily a waste disposal system that contributed the occasional meal and even less frequent revenue.
