INTRODUCTION

The phenomenon of food diversification is now a reality, and there is every reason to believe that it will only become greater as time goes on. One of the primary reasons for this growing trend is, of course, immigration. Canada's population is becoming more heterogeneous; increasingly, it is made up of people from different lands and different origins that bring their own particular eating habits with them. But other factors are at play as well: changing tastes; travel, which brings people into contact with other cultures and other habits; mixed marriages; a greater desire on the part of consumers to try new or foreign products; and so on and so forth.

Kingston is a thriving town, proportionally affected by immigration statistics and trends. Unfortunately, the grocery needs of the South Asian community are neglected.
