Servers depend heavily upon customers for a large portion of their income. The restaurant business is constantly trying to design ways of increasing sales, and thus increasing gratuity. In an article by Ginger A. VanVolkinburg (1998), she studies the correlation between server posture and the degree of add-on sales. She hypothesizes that servers who squat next to the table will increase the sales of add-ons to the tickets. VanVolkinburg used a national franchise restaurant from the Midwest. She collected data from 54 people who were all seated at 21 tables.
