Potassium

Ever wonder why it is so important to eat your vegetables? Ever hear your parents tell you that it is important for you to get enough potassium in your diet every day, but don’t know why? Potassium is a mineral that helps us contrast our muscles so we can do every day activities like run, walk, talk, play and eat. Another important function of potassium is it helps us release energy while our body is metabolizing – or breaking down our food to help digest it, as well as maintaining proper function of the eyes. It may not be something you often think about, but potassium is very important to our every day life.
Potassium has been used by humans for many centuries. It was first known as vegetable alkali, because it was first found from ashes of plants that were burned. That term was given to it to distinguish it from another material known as mineral alkali, which is also known as soda ash or hydroxide.
