Nutrition Report

Especially in the culinary world of today, recipe modification is extremely important. With the current trend leaning toward healthier food, a chef needs to be able to take an old recipe and bring it “up-to-date.” Also, being that Americans have the highest obesity rate of the entire world, being a professional chef in America carries with it the responsibility to maintain food integrity while lowering or omitting unhealthy ingredients.
Our group was assigned a relatively healthy recipe: salmon, vegetables, and a linguini pasta. However, there is always room to improve. By taking out ingredients that were high in fat and cholesterol while adding ingredients that boosted to complex carbohydrates and fiber, we have come very close to the perfect meal, nutritionally.
