Food

In this chapter I learned about purchasing, receiving, storing, and issuing of food and beverage. This chapter mainly talks about the flow of food and beverage products through a food service operation.
In the purchasing process employees need food, beverages, and other supplies to prepare the menu. So purchasing is important because a food and beverage operation has to purchase the food and beverages in order to produce and sell food and beverage items. It is also important because money can be determined if it is being made or lost based on how the purchasing works. “Every dollar saved through effective purchasing increases a property profit by one dollar.” So if you purchase to many items money can be tied up in unnecessary inventory. And if you don’t purchase enough items sales are lost and guest are unsatisfied. The goal to purchasing is to buy the right product, obtain the right quantity, pay the right price, and deal with the right supplier.
