Pesto Sauce

2 garlic cloves, chopped
1 cup fresh basil
¼ cup freshly grated parmesan cheese
2 tbsp pine nuts
¼ cup olive oil





Soup
8 large fresh tomatoes
1/3 cup minced shallots
2 tsp. Salt
2 tsp sugar
Fresh ground pepper to taste


Pesto sauce

Combine garlic, basil, Parmesan and nuts in a blender and puree. With machine running slowly add oil until mixture is consistency of thick mayonnaise. Store in jar in refrigerator. Leftover sauce is good on pasta.
